I subbed arborio rice which required a few 1/2 cup splashes of water as it cooked. I also used carne asada seasoning in place of the adobo seasoning since that’s what I had on hand. It’s everything a great dish needs: tasty, healthy, quick prep, easy cleanup! I can’t wait for tomorrow’s lunch to stuff it into a whole wheat tortilla. I really can’t do white rice so I made the brown rice ahead of time. After the lentils were done, I just added the cooked brown rice, covered it again and waited 5 minutes. I don’t like black beans and substituted pinto beans. With pinto beans you might be able to substitute the fire roasted tomatoes for Mexican stewed tomatoes. Your recipe easily converted to low salt by just substituting low sodium canned goods, and excluded the adobe (didn’t have) and cheese. For the cheese, I substituted a corn tortilla and melted half a slice of pepper jack cheese on it, and ate that with your Southwest Lentils. Thank you, thank you, thank you!!!

We haven’t tried it but I do think it could be done! I’d try cooking on high for 4 hours or low for 7-8 hours.

The recipe is so flavorful and filling. I chose not to add any cheese and it was still delicious.
My husband hates lentils but mixed into this dish he didn’t even know they were in there.

I followed the recipe as written. It’s not spicy, but I could see the addition of a few extra spices to give it some heat. I did have to add a splash of extra water during the end of the cooking time since my rice and lentils were a little crunchy/firm when the water was absorbed. (I was using a cast iron skillet with a mismatched lid, so it’s possible that extra water was evaporating during cooking.) We used lots of toppings – cheese, sour cream, spring onions, and tortilla chips – but it would be good without. It wasn’t hard to put together at all, just make sure you allot enough time for the lentils and rice to fully cook!
