This was so, so good! The ratio of seasonings is perfect. I skipped the broccoli because that’s not a fave of ours, and substituted another bell pepper instead. It turned out delicious. Will be making again!

I meal prep for my husband and randomly saw this recipe and decided to try it. He said it is one of his favorite things I have made. His comments are that it “has the best balance of meat and vegetables” and that “the vegetables and seasonings taste great together.” I like it because it’s so simple to make, inexpensive, and easy to clean up after. I make it exactly as the recipe states, except I only use 1 tablespoon of oil. I use Walmart brand chicken sausage. I weigh everything for calorie tracking purposes, make one recipe worth and cut it into 2 meals. It comes out to around 570 calories per meal, which is what my husband prefers. If it was for me, I would cut it into 3rds or 4th. Either way, this recipe is awesome and I’m happy I found it.
