This is so so good. Iโ€™ve been craving chicken salad and I almost broken down and bought some on sale at Costco but I thought I bet I could grab a rotisserie chicken and make my own healthier version. This recipe is perfection and so adaptable. I wish I had some pecans. Next time for sure. This is my new go to recipe. Iโ€™ll be eating this all summer.

I personally don’t think tuna would be a good fit with the apples and cranberries, but it all comes down to personal preference!
