Cinnamon apples are simply my jam, but I especially love them during the Fall when apples are in season. And what better way to enjoy warm, cooked apples than on top of fluffy Apple Cinnamon Pancakes! This easy apple pancake recipe is infused with lots of warm and cozy flavors and simply a treat to enjoy. Sure, you can make regular pancakes this weekend, but why not take them up a notch with these extra fluffy, apple cinnamon pancakes!

Ingredients For Apple Cinnamon Pancakes

These apple cinnamon pancakes are seriously next level and the cooked apple topping really makes them extra special. Here’s everything that you’ll need:

 • Apples: The sweet apple topping is what makes these pancakes stand out! There are lots of different apples to choose from, but I like to use a sweet or semi-sweet apple like Gala, Fuji, or Honeycrisp apples.
 • All-Purpose Flour: Flour is the primary foundation for the pancakes. You can substitute up to half of the flour with whole wheat flour without it making the pancakes too dense.
 • Baking Powder & Baking Soda: Both are leavening agents which help make the pancakes light and fluffy instead of dense and gummy.
 • Sugar: Sugar adds the perfect amount of sweetness to the pancake batter and the apples. I chose granulated sugar for the pancakes and brown sugar to sweeten the apples, but you can certainly use whichever sugar you prefer.
 • Cinnamon: Ground cinnamon adds a touch of sweetness and warmth to both the cooked apples and the pancake batter.
 • Salt: A little bit of salt helps balance the flavor of the pancakes.
 • Buttermilk: Buttermilk combines with the flour to add moisture and create the batter. I chose buttermilk for extra fluffy pancakes, but you can certainly use regular milk instead. I’ve also provided some buttermilk alternatives down below.
 • Egg: The egg helps hold the pancakes together, it gives them a nice springy texture, and also helps leaven the pancakes.
 • Butter: Butter adds lots of flavor and richness to the pancakes and the apples.
 • Vanilla Extract: A small amount of vanilla extract adds a wonderful flavor and depth to the pancakes.
 • Maple Syrup: Of course you have to finish these with a drizzle of pure maple syrup on top!😉

Buttermilk Alternatives

I love using buttermilk when I make pancakes to help make them extra fluffy. But sometimes buttermilk can be expensive, especially if you don’t plan on using it all up before it goes bad. So here are two cheaper options to consider:

 • Milk + Vinegar or Lemon juice – Mix 1-2 Tbsp of white vinegar or lemon juice with 1 cup of milk. Stir and let the mixture sit for 10 minutes. Proceed to use in the recipe in place of buttermilk.

Freezing Buttermilk

Did you know you can freeze buttermilk? If you buy buttermilk from the store, instead of letting the rest go bad in the fridge, try freezing leftover buttermilk to use for later!

Recipe Tips and Variations

 1. Don’t overmix the batter. Stir the dry and wet ingredients together until they are just combined and there are no traces of dry flour left in the bowl. Over-mixing the batter will develop the gluten in the flour and make the pancakes rubbery rather than soft and fluffy.
 2. Control your temperature. Keep the heat between medium and medium-low heat. If the temperature is too high you may burn the pancakes before they’ve had a chance to cook all the way through.
 3. Want even more apple cinnamon flavor? Try adding some store-bought or homemade applesauce to your batter. I didn’t do this step with this recipe, but I love doing this at home to add even more flavor to the pancakes! Gently fold in up to ⅓ cup of applesauce into the batter once the wet and dry ingredients are combined. Again, be sure not to overmix.

Storing Leftovers

These apple cinnamon pancakes can easily be stored in an airtight container in the refrigerator and enjoyed for up to 4 days. You can store the pancakes and the cooked apple topping separately if you want, but I often store mine together. The apples hold their texture very well. Reheat in the microwave until warmed through or pop the pancakes in the toaster to reheat separately from the apple topping.

Notes

*You can certainly use regular whole milk instead of buttermilk if that is what you have on hand. I wanted extra fluffy pancakes which is why I chose to use buttermilk.

Overnight Oats are the ultimate introduction to budget-friendly meal prep! With the busy lives we all lead, it’s hard to fit in time for breakfast before rushing out the door, but this no-cook recipe is the magical solution, trust me! My overnight oats base recipe is absolutely delicious as-is but is also the perfect vessel for your favorite toppings. And don’t worry if you’re not feeling particularly creative; I’ve shared 3 of my favorite flavor variations below.

Overhead view of overnight oats with various toppings

I must confess: I almost always skip breakfast if I don’t plan ahead! Then, noon rolls around, and I am hangry. It’s not a good look—just ask my husband! That’s why having this overnight oatmeal in the fridge at all times is a MUST. Oats are full of fiber, which keeps me full until lunchtime, and I love the blank canvas to turn them into a unique treat, depending on my craving that day.

What Are Overnight Oats?

Think of overnight oats as the cooler, more convenient cousin of traditional oatmeal. Instead of cooking the oats on a stovetop or in a microwave, they soak overnight in liquid (usually milk) and soften to the perfect texture without heat. I also add brown sugar, chia seeds, and cinnamon to my base recipe to create a delicious, well-rounded breakfast. Mix it all in a mason jar and let it sit in the fridge overnight for a grab-and-go breakfast in the morning!

Ingredients for Overnight Oats

Here’s what you’ll need to make my easy overnight oats recipe:

 • Oats: I use old-fashioned oats (also known as rolled oats) for my overnight oatmeal. Quick-cook oats and steel-cut oats don’t work as well, as they absorb liquid differently.
 • Milk: I like to make mine with dairy-free milk, but I whipped these oats up a few times with whole milk, 2% milk, and almond milk, so I can tell you this recipe works no matter your preference!
 • Brown Sugar: Adds just the right amount of sweetness.
 • Cinnamon: You can also use a different spice depending on the toppings you’ll add—pumpkin pie spice, nutmeg, or whatever you like!
 • Chia Seeds: At its core, overnight oats only require two ingredients: oats and milk. But I highly recommend adding chia seeds! They soak up liquid like crazy and create a chia oatmeal pudding-like texture. They’re also nutrient-dense, providing fiber, iron, and omega-3s.
 • Salt: Just a pinch will enhance the other flavors.
 • Toppings: Add any toppings you love to your jar! I’ve listed some of my favorites below, but you really can’t go wrong with any combination.

Are Overnight Oats Healthy?

Oats are a great source of fiber, protein, vitamins, and minerals! They’ll keep you full and satisfied for longer, making them a great breakfast option. Adding milk, chia seeds, fresh fruit, and nuts only adds to their nutritional value. You can leave out the brown sugar if you want to reduce the added sugar, but overall, overnight oats with chia seeds can definitely be considered a healthy choice!

Tips and Suggestions

 • The perfect ratio for oats to milk is 1:1, in my opinion. I use ½ cup of oats and ½ cup of milk to make one serving. You don’t need to reduce the milk if you omit the chia seeds.
 • Add fresh fruit just before eating to stop them from getting mushy. The same goes for granola or anything else you want to stay crunchy.
 • Let the oats sit overnight (about 8 hours) for the best texture, but 15 minutes or so is okay if you’re in a hurry. This is enough time for the chia seeds to absorb some liquid and for the oats to soften slightly.
 • Overnight oats are meant to be enjoyed cold, but you can absolutely heat them up if you prefer a warm breakfast. 60-90 seconds in a microwave-safe container should do the trick!

how long do overnight oats last?

These oats can last in the fridge for 4-5 days, making them great for meal-prepping. I prefer enjoying them within 12 hours for the best texture, but they’ll still taste good after a few days—maybe just a bit softer. Store them in an airtight container to keep them fresh, and don’t add any toppings until you’re ready to eat them.

Overnight Oats Variations

I am super picky when it comes to my oatmeal: 1. I want a lot of varied textures, 2. I want it to be nutrient-dense and have healthy components, and 3. It has to come together FAST! These flavor variations check everything off my list:

Peanut BUTTER and Jelly

Your childhood favorite gets an upgrade with my peanut butter and jelly overnight oat recipe. I layer blueberry jam with crunchy peanut butter AND peanuts for extra crunch. Add a few fresh blueberries and you’re good to go!

Chocolate Raspberry

Will chocolate and fresh berries ever not be a match made in heaven? I don’t think so. You only need some raspberry jam, dark chocolate chips, and fresh raspberries to make a breakfast that tastes just like dessert.

Banana Walnut

Banana bread is my go-to coffee shop snack, so I always have an overnight oat version in the fridge. Simply mix in some walnuts and add sliced bananas on top for a delicious and satisfying breakfast that’ll keep you feeling full all morning!

I’m not saying you have to make zucchini bread this summer, but you HAVE to make this Zucchini Bread this summer!😄 It’s made with the simplest ingredients, is perfectly moist, and the best way to enjoy breakfast on the go for just $0.41 per slice! I was first introduced to this delicious zucchini bread recipe by my mom about 10 years ago and I’ve been in love with it ever since. It’s my favorite way to use up extra zucchini during the summertime. But I’ll be honest, this zucchini bread is so good it will have you wanting to make it all year long!

Overhead view of zucchini bread sliced on a cooling rack.

Why Make Zucchini Bread?

If you’re wondering what’s all the hype about zucchini bread, let me fill you in. Zucchini has a fairly neutral flavor and adapts very well to the warm spices, like cinnamon and vanilla, in this recipe. So it ends up being the perfect way to incorporate a green vegetable into a delicious homemade bread recipe. And because zucchini contains over 90% water it also makes this zucchini bread super moist and irresistible!

Ingredients You’ll Need

Here’s everything you need to make this easy zucchini bread recipe:

 • Zucchini: Zucchini naturally contains a lot of water, but there’s no need to pat or squeeze out the excess water for this recipe. In this case the extra liquid helps add moisture to the bread, saving you an extra step!
 • Flour: All-purpose flour gives the zucchini bread structure and body.
 • Baking Soda & Baking Powder: Baking soda and baking powder are both leavening agents to help the bread rise into a pretty doamed loaf shape. I used both due to the extra acidity from the applesauce.
 • Eggs: Eggs help the ingredients bind together and help give the loaf strength.
 • Sugar: I used a combination of both white and brown sugar to balance the sweetness, moisture and texture of the zucchini bread.
 • Applesauce & Oil: The combination of both applesauce and oil keeps the bread moist, but not too oily and also adds wonderful flavor.
 • Cinnamon & Vanilla: Simple spices like cinnamon and vanilla extract adds the perfect amount of flavor and richness to this zucchini bread.
 • Walnuts: Chopped walnuts are optional, but I love the contrast in flavor and texture they add to the bread.

Do You Peel the Zucchini Before Grating It?

You don’t have to worry about peeling the zucchini before grating it, saving you another extra step. Just give it a good wash with your hands or a vegetable brush and you’ll be good to go!

Tips for The Best Zucchini Bread!

 1. Don’t overmix the batter. Overmixing will cause the bread to become rubbery and dense instead of light and fluffy. Mix the dry and wet ingredients together until they are just barely combined and there are no traces of dry flour left in the bowl.
 2. Grease your loaf pan well with butter or oil to prevent the bread from sticking to the pan.
 3. Extremely large zucchini tend to have an even higher water content than regular sized zucchini. So if you happened to grow some extra-large zucchini this year in your garden or picked up some from your local farmers market, you may need to squeeze out just a little bit of the excess water after it’s grated.

Storing Leftovers

This homemade zucchini bread makes the best grab-n-go breakfast! To store leftovers make sure the bread is completely cooled after baking, then cut it into thick slices. Place the zucchini bread in an airtight container or a gallon-sized storage bag in the fridge for up to 4 days. For longer storage, store in a freezer-safe storage bag for up to 3 months. Individual slices can be taken out and thawed at room temperature or briefly microwaved to warm through.

If muffins are more your jam, don’t worry…this recipe also makes perfect, smaller-sized Zucchini Muffins!

Granola Bars https://www.budgetbytes.com/granola-bars/ https://www.budgetbytes.com/granola-bars/#comments Wed, 12 Jun 2024 13:30:00 +0000 https://www.budgetbytes.com/?p=94942 Homemade Granola Bars are wholesome and healthy! Loaded with oats, dates, peanut butter, walnuts, and chocolate chips.

The post Granola Bars appeared first on Budget Bytes.

]]>
When I’m looking for a snack, I want it to be wholesome. These Homemade Granola Bars are delicious and free of all the junk and preservatives you can’t pronounce on most boxes of affordable store-bought granola bars. Instead, I loaded mine with quick rolled oats, Medjool dates, peanut butter, walnuts, and chocolate chips. They still taste amazing and are much healthier with whole food ingredients.

3 stacked granola bars on a white plate.

I’m not ashamed to say that I’m a bit crunchy… the kind of “crunchy” who left the city for the county, lives on a farm, grows their own vegetables, and makes their own Granola Bars. Guilty as charged! I love a hearty, chewy granola bar with a variety of textures, and this recipe is all of that and more! Marsha and I break these out of the freezer at the Budget Bytes studio on a regular basis; they make one heck of a snack.

Bonus: Because there’s no heat involved, these homemade granola bars are also fun to make with kids! They can mold the dough into fun shapes and help you in the kitchen!

Are Granola Bars Healthy?

That depends on a lot of factors. In general, granola bars are a good source of fiber (and sometimes protein, too!). However, many times, they also contain as much sugar and calories as candy bars. As a general rule, if I check the ingredient label on something and I can’t recognize or pronounce the majority of the ingredients, I usually put it back.

My homemade bars are made with Medjool dates and honey as the primary sweeteners, which are both lower on the glycemic index, making these bars more nutrient-dense and healthier than ones made with straight up sugar or corn syrup. The peanut butter and walnuts add a good bit of protein, and the oats up the fiber content. Overall, these homemade granola bars are much healthier than store-bought, but taste even better!

Ingredients

Here’s what you’ll need to make granola bars:

 • Medjool Dates: Sweeten the bars and help bind them together.
 • Chunky Peanut Butter: Adds creaminess and crunch, and also helps bind everything together.
 • Walnuts: Add extra crunch and protein.
 • Cinnamon: Adds a touch of warmth to the bars that enhances their overall flavor.
 • Sea Salt: Enhances the flavors of these bars.
 • Quick Rolled Oats: These are cut into smaller pieces than traditional rolled oats, making for a more cohesive bar.
 • Honey: Adds a little extra sweetness and helps the bars harden.
 • Chocolate Chips: Add a pop of rich chocolate flavor!

Is it cheaper to make your own granola bars?

Sometimes! I like to buy peanut butter and oats in bulk whenever they’re on sale since they keep well for a long time unopened. This really helps me cut down on costs. Some value-sized packs of store-bought granola bars are cheaper than my homemade recipe, but I can guarantee the ingredients aren’t nearly as wholesome. At just $0.72 per bar, these healthy homemade granola bars are good for your wallet and better for your body!

What Else Can I Add?

Listen, I am hard on myself when it comes to food waste. It’s up there on my top 10 list of pet peeves, right next to the car being left on empty. My solution? When life hands you overripe bananas about to meet their doom, make this sweet, creamy, budget-friendly Banana Cake instead! This Banana Cake is moist and sweet and is complimented perfectly by the ultra creamy cream cheese frosting.

a cut banana cake missing a slice in a glass baking dish.

This creamy, rich Banana Cake is dessert, it’s breakfast, it’s the treat we all need and deserve! The best part? This cake is so easy to make, and I bet you have most- if not all- of the ingredients already on hand!

What is Banana Cake?

Banana cake is really as simple as it sounds… a cake with bananas in it! This cake is perfectly sweet and dense, but a little fluffier than your typical banana bread. The cream cheese frosting compliments the sweet and warm banana flavor perfectly. I highly recommend having banana cake for breakfast after making this!

Ingredients

Here’s what you’ll need to make banana cake:

 • All-Purpose Flour: Gives the cake its structure.
 • Baking Soda: Helps the cake rise.
 • Cinnamon: Adds warmth to the batter.
 • Salt: Enhances the overall flavor of the cake.
 • Lemon Juice: Provides the necessary acid to activate the baking soda and emphasizes the tangy flavor of the frosting.
 • Bananas: You’ll need 3 very ripe bananas for this cake. Unripe or just ripe bananas will not mash well and won’t have as much natural sweetness.
 • Sugar: Granulated and light brown sugar sweeten the cake, while powdered sugar sweetens the frosting without making it gritty.
 • Eggs: Help bind the cake together.
 • Unsalted Butter: Adds moisture and richness to the cake and helps create a smooth and cohesive frosting.
 • Vanilla Extract: Adds warmth to the cake and the frosting.
 • Milk: Adds moisture to the cake.
 • Cream Cheese: Creates a rich and tangy frosting.
 • Walnuts: Add a delightful crunch to the top of this cake.

Can Bananas Be Too Ripe?

Yes, but you’d have to wait a good long while. Bananas are safe to eat and cook with well after their skins have turned black. However, if you notice any fuzzy white, gray, or green mold or if the banana smells rotten, fermented, or is leaking any fluids, it’s best to toss it. Additionally, if the fruit itself has turned completely black, it is beyond saving.

Tips and Tricks

 • Use very ripe bananas. The sugar content of bananas increases as they ripen, so the more ripe your bananas are the sweeter the cake and the more pronounced the banana flavor will be.
 • Grease the baking dish well. This is a VERY moist cake, and it will stick if you don’t grease the baking dish well.
 • Use room-temperature eggs and dairy. This will help the batter come together more quickly, and it will help create the smoothest frosting.
 • Don’t overmix the batter. A few lumps are okay.
 • Let the cake cool completely before frosting it. Frosting a hot cake is a recipe for disaster!

 • 3 cups powdered sugar $1.02

 • 2 Tbsp crushed walnuts $0.29

Instructions

 • Preheat the oven to 350°F (177°C) and grease a 9×13” baking dish. Whisk the flour, baking soda, cinnamon, and salt together. Set aside.
 • Mash the bananas and lemon juice with a fork and set aside.

 • Add the eggs and the vanilla to sugar/butter mixture. Beat on medium speed until combined.
 • Then, add the mashed bananas.
 • With the mixer on low speed, using your free hand, add 1/3 of the dry ingredients and 1/3 of the milk, back and forth until all ingredients are fully mixed in. Do not overmix. The batter will be slightly thick and a little lumpy from the bananas.
 • Spread batter into the buttered pan and bake for 45–50 minutes. When you insert a toothpick in the center and it comes out clean, you know your cake is done! If you notice the cake is browning very quickly, test it with the toothpick and cover loosely with aluminum foil for the remainder of the bake time if it’s not quite done.
 • To make your frosting, combine all frosting ingredients in a large mixing bowl and mix with your handheld mixer until completely creamy and smooth.
 • Allow cake to cool completely (on the countertop it took my cake about an hour) before frosting. Frost and enjoy with an extra sprinkle of crushed walnuts on top!

Did you know you can freeze avocados? This information was life-changing when I opened my former restaurant, AVO, in Nashville back in 2015; we used frozen avocado in our signature drink, the Avocado Margarita and let me tell you, freezing ripe avocados saved us a bunch of dough! Now, I buy ripe avocados any time they’re on sale, slice them up, and toss them in the freezer for later. This avocado smoothie is the perfect way to use up frozen avocado. I know avocado in a drink might sound crazy, but trust me, it’s the secret to an ultra-rich, dessert-like smoothie. It’s packed with healthy fats and imparts that same creamy texture that avocados (and guacamole) are known for! This is your new favorite green smoothie.

close up of an avocado smoothie in a green glass.

What Is An Avocado Smoothie?

Citrus and avocado are a classic combination. In this smoothie, I add a creamy, ripe banana and a little extra sweetness from agave nectar, making it an instant winner! Super creamy, bright, and fun, this avocado smoothie is the perfect treat with lots of healthy ingredients involved.

Ingredients

Here’s what you’ll need to make an avocado smoothie:

 • Frozen Avocado: Makes this smoothie lusciously creamy and adds heart-healthy fats, fiber, and omega-3s.
 • Agave: This syrup adds a touch of sweetness to this smoothie to balance out the acidic flavors. Agave is a neutral flavored sweetener unlike maple and honey (which are delicious!) but can sometimes take over flavor-wise.
 • Frozen Banana: Adds flavor, subtle sweetness and creaminess.
 • OJ: Balances the fattiness of the avocado, adding a bright flavor.
 • Lime Juice: Adds a touch of extra acidity to balance out the sweet and creamy flavors.

What Else Can I Add?

This smoothie is a great base to add extra greens or fruit to!

 • I love to add spinach or kale.
 • Frozen blueberries or pineapple make great fruity additions!
 • For a protein boost, add a scoop of peanut butter or vanilla protein powder!

I’m always looking for ways to get breakfast and dinner on the table faster and these Sheet Pan Pancakes might just be my new best friend! Not only are they easy to whip up, but they’re super convenient. You can pour the entire pancake batter on one baking sheet and top it with your favorite toppings, or leave it plain and let everyone add their own toppings after it bakes. What I love most about these sheet pan pancakes are that they’re perfect for breakfast meal prep. They freeze perfectly and whenever I need a quick breakfast, I just pop 2 pancakes in my toaster and breakfast is done!🙌

Why Sheet Pan Pancakes?

I’m not sure if your family loves pancakes as much as mine, but it has now turned into our Saturday morning routine. But flipping and making several batches of regular pancakes takes quite a while. And I have to try and keep the first few batches warm in the oven, while I make the rest of the pancakes. Sheet Pan Pancakes keeps you from having to do that back and forth dance. You can make pancakes for the whole family in one big batch, all on one baking sheet, and customize it with their favorite mix-ins and toppings. It’s honestly genius!

Ingredients For Sheet Pan Pancakes

To make these sheet pan pancakes, I used our homemade pancakes recipe as a base foundation and adjusted the measurements to accommodate a larger portion size. Here’s what you’ll need:

 • All-Purpose Flour: Flour adds structure and is the foundation of the pancakes.
 • Baking Powder: Baking powder is what makes the pancakes light and fluffy instead of dense and gummy.
 • Sugar: A little bit of sugar adds the perfect amount of sweetness to the pancakes.
 • Milk: Milk combines with the flour to add moisture and helps create the batter.
 • Egg: Eggs help hold the pancakes together and also helps leaven the pancakes.
 • Butter: Butter adds flavor and richness to the pancakes.
 • Vanilla Extract: A small amount of vanilla extract adds a wonderful flavor and depth to the pancake.
 • Salt: A little bit of salt helps enhance the flavor of the pancakes.
 • Toppings: This is where you can really have fun! I used a combination of my favorite fruits like strawberries and blueberries. And for some variety I added some chocolate chips and peanut butter & raspberry jam.

More Toppings and Mix-in Ideas

My favorite part about making sheet pan pancakes is adding different mix-ins and toppings. I personally love adding fresh fruit, but here are some more topping ideas for you to try:

Close up side view of sheet pan pancakes on a serving plate with maple syrup being drizzled over the top.

Recipe Tips!

 1. Don’t overmix the batter. Stir the dry and wet ingredients together until they are just combined and there are no traces of dry flour left in the bowl. Over-mixing the batter will develop the gluten in the flour and make the pancakes rubbery rather than soft and fluffy.
 2. Grease your sheet pan well. Make sure to generously coat your sheet pan well with cooking spray to keep the pancakes from sticking.
 3. Dry your fruit well. If you’re adding fresh fruit, make sure to wash and dry your fruit well with paper towels to prevent any excess water or fruit juices from bleeding into the pancake batter.
 4. If necessary, use some parchment paper. Sheet pan pancakes seem to work better with baking sheets that aren’t too old. So if your baking sheet is older or a little beat up, you may want to line it with some parchment paper first.

How To Store & Freeze Sheet Pan Pancakes

What I love most about making sheet pan pancakes is that they’re extremely easy to store and freeze for later when you need a quick & easy breakfast. To store, let the pancakes cool completely, then transfer them to an airtight container and refrigerate for up to 3 days.

To freeze, place the cooled pancakes in a freezer safe storage bag, in single layers with parchment paper between the layers to prevent sticking. Freeze for up to 3 months. You can easily reheat frozen pancakes in a toaster or in the microwave until hot.

Potatoes, or “spuds” as my Irish brother-in-law affectionately calls them, are truly a favorite for just about everyone. Potatoes can be cooked 1,000 ways and they always steal the show! These air fryer potatoes are proof of that. Soft on the inside and crispy on the outside, they’re like mini baked potatoes. They are seriously delicious dipped in ketchup, mayo, or Comeback Sauce. This air fryer potato recipe is great to use with whatever potatoes you have on hand, making it the perfect recipe for fridge clean out day.

Why Make Potatoes in the Air Fryer?

Listen, we love roasted potatoes. They’re simple and delicious. But sometimes you need potatoes right now, and roasting just isn’t quick enough. Using an air fryer, these potatoes are roasted to perfection in less than half the time. So, the next time you have a potato emergency, this air fryer potato recipe is here for you. You can thank us later!

Ingredients for Air Fryer Potatoes

Here’s what you’ll need to make air fryer potatoes:

 • Potatoes: You can use any variety of mini potatoes. We found some tri-color potatoes on sale, so we used those!
 • Oil: Helps keep the potatoes moist as they cook and helps them get nice and crispy on the outside. We used olive oil, but you could also use vegetable or canola oil.
 • Spices: A combination of garlic powder, onion powder, smoked paprika, salt, and pepper creates a smoky and savory flavor and the paprika adds a pop of color.
 • Fresh Parsley: Adds a little bit of greenery and freshness.

Should I Soak the Potatoes?

We did not do this, but cutting and soaking potatoes in cold water releases some of the starches and can make the potatoes crispier! Our potatoes were more like tiny bites of the perfect baked potato!

What Else Can I Put On Air Fryer Potatoes?

We love the seasoning mix listed in the recipe below, but the sky is the limit! Here are some other ways you can season your air fryer potatoes:

What To Serve With Air Fryer Potatoes

Avocado toast was all the rage just a few years ago, but I have good news…this easy 5-10 minute meal never goes out of style. It only requires a few simple ingredients, but you can always spice things up with extra toppings to make it a super filling meal. Today, I’m sharing my favorite basic avocado toast recipe along with helpful tips and 3 easy recipe variations. It’s quick and easy which makes it perfect to whip up for breakfast, lunch or a midday snack. And for those of you who are avocado toast experts, like my colleague Jess, then I’m sure you have a few favorite combinations as well. Wanna share? Let’s meet in the comments!😉

Ingredients For Avocado Toast

You only need a few simple ingredients to make a classic avocado toast. Here’s what I used:

 • Avocado: Avocado is one of the main ingredients, so you’ll want to choose it wisely. Look for avocados that have a slight give when squeezed, but are not mushy.
 • Bread: You’ll want to choose a good quality, sturdy bread. I like using sourdough or whole grain bread. For this recipe I purchased a loaf of bakery sourdough bread so I could get those nice, thick slices. But you can also use pre-sliced sourdough bread from the bread aisle if you want to save a little extra money.
 • Garlic: Rubbing a little bit of fresh garlic over toasted bread while it’s still warm adds incredible flavor.
 • Lemon: A small squeeze of fresh lemon juice adds a pop of brightness and keeps the avocado from browning.
 • Salt & Pepper: Don’t skip the salt! Just a pinch of salt and pepper enhances the flavor of the creamy avocado. Salt and fat is a magical combination!
 • Red pepper flakes (optional): This is optional but it adds a kick and a little bit of extra heat to the avocado toast.

Tips For Making The Best Avocado Toast

 1. Choose your bread wisely: Use a good quality, sturdy bread for the base of your avocado toast like sourdough, multigrain or whole grain bread. Toasted, sturdy bread holds the mashed avocado and any extra toppings a lot better than soft white sandwich bread.
 2. Picking the perfect avocado: When picking your avocado, look for blackish, dark-green skin, which indicates the avocado has ripened. Also give the avocado a gentle press with your finger, the flesh should give slightly under pressure. If it’s mushy, its time has passed.
 3. Don’t skip the extras! Yes, rubbing your toast with a fresh garlic clove may seem like an unnecessary step, but it adds SO much flavor and compliments this simple meal perfectly. Also the small squeeze of lemon juice gives just the right about of brightness and the pinch of salt makes all the flavors pop!

Topping Ideas

There are lots of fun ways to enjoy your avocado toast! In addition to the recipe variations listed in the step-by-step photos below, here are a few more ingredients and topping ideas for you to try:

 • Rub the peeled garlic clove over the top of the warm toasted bread, making sure to fully cover the entire surface area.
 • Next, halve the avocado and remove the pit. Scoop out the avocado flesh from both halves and place it in a bowl. Add a small squeeze of fresh lemon juice (about 1 tsp), salt and pepper to the bowl and mash the avocado with a fork. I recommend leaving it just a little chunky.

Next, halve 1 avocado and remove the pit. Scoop out the avocado flesh from both halves and place it in a medium bowl. Add a small squeeze of lemon juice (about 1 tsp), 1/8 tsp salt and 1/8 tsp freshly cracked black pepper to the bowl and mash the avocado with a fork. I recommend leaving it just a little chunky, but you can certainly mash until it’s completely smooth. It’s up to you!

Recipe Variation 1: If you love juicy, ripe tomatoes then this variation is just for you! Top your avocado toast with two slices of tomatoes, a drizzle of balsamic glaze, and freshly cracked black pepper. This combo is perfect for the summer when tomatoes are in their peak season. So delicious!

Two slices of avocado toast with a hard boiled egg and soft scrambled egg on top.

Recipe Variation 2: My absolute favorite way to enjoy avocado toast is by adding some scrambled eggs, a fried egg, or hard boiled egg on top. You can even take it a step further and add a little chili crisp on top too!

Avocado toast with cottage cheese on top.

Recipe Variation 3: And for all of my cottage cheese lovers out there, try topping your thick crusty bread with a spoonful or two of small curd cottage cheese, 1/2 avocado sliced, salt, freshly cracked black pepper, and a squeeze of fresh lemon juice. Enjoy!
