Camping is one of my favorite budget-friendly activities. Whether it’s a girl’s trip or a family affair, count me in! You know what goes hand in hand with camping? S’MORES! And boy, do I have the easiest version of that camping menu classic for you. This skillet S’mores Dip recipe is the cleanest, mess-free way to serve s’mores! Zero mess, zero fuss. All you need is just 3 ingredients and a box of graham crackers; this is the easiest dessert ever!

Here in Tennessee, the weather stays hot until October, so I always associate camping with early autumn. It’s something I look forward to sharing with my daughter now that she’s 3 and a little more adaptable. You already know this s’mores dip will be on the menu for our next camping trip! It gives us all the flavors and fun of s’mores with minimal cleanup. Plus, it’s perfect for little hands (and big hands, too!) to dip and enjoy. Just be careful to not touch the skillet—she’s hot!

What is S’mores Dip?

I think most of us are familiar with traditional s’mores: graham crackers sandwiched with a layer of chocolate and a big toasted marshmallow. Well, with my s’mores dip recipe, we’re ditching the roasting stick and building our s’mores right in a cast iron skillet! I layer semi-sweet chocolate chips AND white chocolate chips for the ultimate indulgence (but on a budget, of course), then top it all off with mini marshmallows. Everything melts together in the oven (or on a hot grill or over a campfire if you have the right set up), and voila! You have a delicious, ooey-gooey s’mores dip to scoop up with graham crackers.

Ingredients for S’mores Dip

Here’s what you’ll need to make this easy s’mores dip recipe:

  • Semi-Sweet Chocolate Chips: The base of this dip is made with a layer of semi-sweet chocolate chips. You can also use milk chocolate or dark chocolate chips, or even a chocolate bar broken into small pieces. 
  • White Chocolate Chips: Adds a creamy, sweeter contrast to the semi-sweet chocolate chips. 
  • Mini Marshmallows: I prefer using mini marshmallows as they melt quickly and evenly. You can also use regular-sized marshmallows or jumbo marshmallows cut in half.
  • Graham Crackers: Honey or cinnamon-flavored graham crackers both work well as dippers—choose your favorite!

What Else Can I Add?

This is one recipe you really can’t mess up! Feel free to get creative and add your own twist. Some fun ideas include:

  • Peanut butter or butterscotch chips
  • A drizzle of caramel sauce on top
  • Dollops of peanut butter between the chocolate and marshmallow layers
  • Chopped nuts (peanuts, almonds, pecans) mixed in with the chocolate chips
  • Instead of graham crackers, try dipping with cookies, fruit, or pretzels/Ritz crackers (salty and sweet is always a winning combo!)

Do I Need a Cast Iron Skillet?

Cast iron heats up evenly and stays hot for a long time, making it the perfect vessel for this s’mores dip. The chocolate melts quickly and stays melted for longer in a cast iron skillet. However, you can make this recipe in any oven-safe dish or pan. Just keep an eye on the dip, as it may cook a bit faster or slower, depending on your dish.

Top Tip

Chocolate can burn and become grainy if heated for too long. Evenly layer the chocolate chips and marshmallows, and switch to broil very briefly once the marshmallows start to puff up. The chocolate will continue melting from the residual heat without overcooking! If you’re doing this over a campfire or on a grill, you won’t get the toasty marshmallow appearance but they will still become gooey and warm. Yum!

Storage and Reheating Instructions

One of my favorite things about this s’mores skillet dip is how it can be reheated multiple times so nothing goes to waste. Just pop it back in the oven until warmed through and melty. You can also store any leftover dip in the fridge for 3-4 days in a microwave-safe container and reheat as needed.

The buttery base is loaded with Ritz crackers, brown sugar, AND graham crackers for the ultimate easy crust, while the key lime filling is velvety smooth and creamy thanks to the addition of Greek yogurt. These homemade bars are like a slice of paradise– I guarantee you’ll want to make a double batch!

What is Key Lime Pie?

Key lime pie is a classic American dessert made from key lime juice, sweetened condensed milk, and a crumbly cracker crust. Its origins are hotly contested; some say this deliciously tart treat originated in the kitchens of New York City, while others more widely believe it was first made in Key West, Florida, where key limes grow in abundance. No matter where it originated, my key lime pie bar recipe gives you all the flavors of this iconic dessert in an easy-to-make and portable form!

Key limes are smaller than regular limes, and their flavor is more bitter. They’re also more aromatic and have a lighter, more yellow juice than regular limes. If you can find some fresh, a thin slice will make the perfect garnish! In my recipe, I opted for regular lime juice over key lime, because it shaved about $3.00 off my total cost, and, as you know, that’s what we’re all about here in the Budget Bytes kitchen. 

Ingredients for Key Lime Pie Bars

Here’s what you’ll need to make these homemade key lime pie bars:

  • Ritz Crackers: These buttery, salty crackers make the crust extra delicious.
  • Graham Crackers: Use whole graham crackers, rather than the pre-made boxed crumbs, to cut costs and give the crust a better texture.
  • Brown Sugar: Adds sweetness and helps to bind the crust together.
  • Butter: Use cold, unsalted butter to make the crust.
  • Cornstarch & Water: Helps to thicken the key lime filling without using eggs.
  • Lime Juice: I use regular lime juice because it’s easy to find and budget-friendly. Feel free to use key lime juice if you can! Nellie and Joe’s key lime juice is a great option if you have some extra room in your budget!
  • Lime: As I use regular lime juice (which is sweeter than key lime juice), the zest and juice from a fresh lime add a little extra zing.
  • Greek Yogurt: Adds tang and creaminess to the filling. Use full fat Greek yogurt for the best results. The yogurt also helps give it a custardy texture, so I don’t miss eggs in my version of this recipe!
  • Sweetened Condensed Milk: Makes this key lime pie bars recipe extra creamy and sweet.

Is Key lime pie supposed to be yellow or green?

Believe it or not, key lime pie is supposed to be yellow! Key lime juice, by nature, is a pale yellow color, meaning the filling of a traditional key lime pie will also be yellow. Green key lime pies have added food coloring or additional ingredients to achieve the green color. So don’t worry if your homemade key lime pie bars look yellow instead of green—that’s how they should be!

Storage Instructions

Keep your key lime squares in an airtight container in the refrigerator for 3-4 days. The crust may soften slightly after a few days, but they’ll still taste delicious! These bars also freeze really well. Lay them out in a single layer on a baking sheet and freeze for an hour, then transfer to a freezer-safe container for up to 3 months. Thaw in the refrigerator overnight before serving.

How To Get Clean Slices

I know how delicious these key lime pie bars smell fresh out of the oven, and it can be tempting to cut into them right away! However, for the best results, wait until they’ve cooled and then chill in the refrigerator for 30 minutes to an hour before cutting. Use a sharp knife and cut straight down in one motion, wiping the knife clean between each slice. This will give you beautiful, clean edges and slices that hold their shape.

***Nellie and Joe’s key lime juice is my favorite option for this recipe, but regular lime juice works just fine and is more budget-friendly. I’m not saying you have to make zucchini bread this summer, but you HAVE to make this Zucchini Bread this summer!😄 It’s made with the simplest ingredients, is perfectly moist, and the best way to enjoy breakfast on the go for just $0.41 per slice! I was first introduced to this delicious zucchini bread recipe by my mom about 10 years ago and I’ve been in love with it ever since. It’s my favorite way to use up extra zucchini during the summertime. But I’ll be honest, this zucchini bread is so good it will have you wanting to make it all year long!

Why Make Zucchini Bread?

If you’re wondering what’s all the hype about zucchini bread, let me fill you in. Zucchini has a fairly neutral flavor and adapts very well to the warm spices, like cinnamon and vanilla, in this recipe. So it ends up being the perfect way to incorporate a green vegetable into a delicious homemade bread recipe. And because zucchini contains over 90% water it also makes this zucchini bread super moist and irresistible!

Ingredients You’ll Need

Here’s everything you need to make this easy zucchini bread recipe:

  • Zucchini: Zucchini naturally contains a lot of water, but there’s no need to pat or squeeze out the excess water for this recipe. In this case the extra liquid helps add moisture to the bread, saving you an extra step!
  • Flour: All-purpose flour gives the zucchini bread structure and body. 
  • Baking Soda & Baking Powder: Baking soda and baking powder are both leavening agents to help the bread rise into a pretty doamed loaf shape. I used both due to the extra acidity from the applesauce.
  • Eggs: Eggs help the ingredients bind together and help give the loaf strength. 
  • Sugar: I used a combination of both white and brown sugar to balance the sweetness, moisture and texture of the zucchini bread. 
  • Applesauce & Oil: The combination of both applesauce and oil keeps the bread moist, but not too oily and also adds wonderful flavor.
  • Cinnamon & Vanilla: Simple spices like cinnamon and vanilla extract adds the perfect amount of flavor and richness to this zucchini bread.
  • Walnuts: Chopped walnuts are optional, but I love the contrast in flavor and texture they add to the bread.

Do You Peel the Zucchini Before Grating It?

You don’t have to worry about peeling the zucchini before grating it, saving you another extra step. Just give it a good wash with your hands or a vegetable brush and you’ll be good to go!

Tips for The Best Zucchini Bread!

  1. Don’t overmix the batter. Overmixing will cause the bread to become rubbery and dense instead of light and fluffy. Mix the dry and wet ingredients together until they are just barely combined and there are no traces of dry flour left in the bowl.
  2. Grease your loaf pan well with butter or oil to prevent the bread from sticking to the pan.
  3. Extremely large zucchini tend to have an even higher water content than regular sized zucchini. So if you happened to grow some extra-large zucchini this year in your garden or picked up some from your local farmers market, you may need to squeeze out just a little bit of the excess water after it’s grated.

Storing Leftovers

This homemade zucchini bread makes the best grab-n-go breakfast! To store leftovers make sure the bread is completely cooled after baking, then cut it into thick slices. Place the zucchini bread in an airtight container or a gallon-sized storage bag in the fridge for up to 4 days. For longer storage, store in a freezer-safe storage bag for up to 3 months. Individual slices can be taken out and thawed at room temperature or briefly microwaved to warm through.

  • Bake the zucchini bread in the preheated oven for 60 minutes or until it's deeply golden brown on top, has a crack down the center, and a toothpick inserted into the middle comes out clean (crumbs are okay, but wet batter is not).
  • Allow the loaf to cool for about 5 minutes in the pan, then gently remove it from the pan and allow it to finish cooling on a wire rack. Once cooled, slice, serve, and enjoy!

Here’s everything you need to make this delicious strawberry sheet cake recipe:

  • Strawberries: fresh strawberries are pureed and then reduced and added to the cake batter and frosting.

  • Baking Powder & Baking Soda: both leavening agents to help the cake rise.
  • Granulated Sugar: to sweeten the cake and the strawberry puree.
  • Eggs: provide structure to help leaven the cake.
  • Vegetable Oil: adds moisture to keep the cake moist and helps the cake bake evenly.
  • Vanilla Extract: adds rich flavor to the cake batter and the frosting.
  • Strawberry Gelatin: adds more strawberry flavor and gives the cake that beautiful pink color. I actually tested this recipe with and without gelatin. Adding the gelatin was definitely the winner! It simply added more flavor and color to the cake.

I tested this recipe by just adding pureed strawberries straight from the food processor; then a second test by reducing the strawberries in a saucepan with a little sugar over medium heat. The strawberry reduction was the winner! It removes a lot of the extra liquid and adds a more concentrated strawberry flavor to the cake. And it tastes ahh-mazing in the homemade strawberry frosting!

Strawberry Cream Cheese Frosting

The strawberry frosting on this cake is my absolute favorite part! The intense strawberry flavor from the reduced strawberries, mixed with the cream cheese and powdered sugar is just heavenly. And if you’ve never made your own homemade cake frosting, then you’ll be surprised by just how easy it is to make. It only requires a few ingredients and it tastes wayyy better than store-bought icing.

Recipe Tips!

  1. Once you add the dry ingredients to the wet ingredients, be careful not to overmix the batter. Overmixing can cause the cake to become dense instead of light and fluffy. Mix the dry and wet ingredients together until they are just combined and there are no traces of dry flour left in the bowl.
  2. Grease your baking dish well. I used a 9×13” glass baking dish and greased it generously with butter. This helps prevent the cake from sticking to the dish. You can also line your baking dish with parchment paper to help the cake release easily from the pan.
  3. Don’t skip the homemade strawberry frosting! The strawberry infused cream cheese frosting is a must have! It’s what really takes this strawberry cake over the top. I seriously had to stop myself from just eating this tasty frosting by itself.

How to Store Strawberry Cake

You can easily store any leftover strawberry sheet cake in an airtight container in the refrigerator for up to 4 days, or you can freeze it for longer storage. To freeze, wrap the cake slices in a double layer of plastic wrap and foil, then freeze for 2-3 months. To thaw, simply let the cake come to room temperature for about 30 minutes then enjoy!

Summer is strawberry season, and you better believe I am always out picking farm-fresh strawberries the first day the U-pick farms open. My favorite thing to do with strawberries (besides eat them by the handful) is make these chewy strawberry cookies. They’re tender, sweet, and full of fresh strawberry flavor. These cookies are the real deal– no artificial coloring or flavoring here. Just sweet strawberries and some creamy white chocolate chips– yum!

What Are Strawberry Cookies?

These strawberry cookies are a sort of cross between chocolate chip cookies and strawberry muffin tops. They’re richly flavored with salted butter, white and light brown sugar, and vanilla extract. The fresh strawberry pieces add tons of bright flavor and a unique texture, and the white chocolate chips add pops of sweetness.

Ingredients

Here’s what you’ll need to make strawberry cookies:

  • Strawberries: Fresh strawberries work best. If you’d like to use frozen, let them thaw completely and drain off any excess water before combining with the lemon juice. Shout out to Slate Farms in Clarksville TN for growing these beautiful strawberries!
  • Lemon Juice: Helps macerate the strawberries to bring out their juices and enhances their natural flavor.
  • Salted Butter: Makes these cookies moist and tender.
  • Sugar: I used a combination of light brown sugar and granulated sugar for depth of flavor and extra moisture.
  • Egg: Helps bind the cookies together.
  • Vanilla Extract: Enhances the sweetness of the cookies.
  • All-Purpose Flour: Gives these cookies their structure.
  • Sea Salt: Enhances the natural flavor of the cookies.
  • Baking Powder: Helps keep the cookies from turning out dense.
  • White Chocolate Chips: Add a pop of sweetness and creaminess.

Storage Instructions

Store strawberry cookies in an airtight container at room temperature for up to 2 days, in the refrigerator for up to 1 week, or in the freezer for up to 3 months.

Tips and Notes

  • Fold gently when adding the strawberries to the dough so they don’t get crushed or turn the dough completely pink.
  • I do not recommend storing the dough to bake later, as the longer the dough sits with the wet strawberries in it, the more moisture they release, negatively impacting the texture of the cookies.
  • If you don’t have a 2-ounce cookie scoop, you can measure the dough with a 1/4 measuring cup and roll it between your palms. Smaller cookie scoops also work, but 2-ounces makes for a nice big cafe-style cookie which is what I was after.
  • These cookies tend to spread in the oven, so to get that beautiful round shape, take a round cookie cutter or cup with a larger diameter and gently swirl it around the cookies as soon as they come out of the oven.

This creamy, rich Banana Cake is dessert, it’s breakfast, it’s the treat we all need and deserve! The best part? This cake is so easy to make, and I bet you have most- if not all- of the ingredients already on hand!

What is Banana Cake?

Banana cake is really as simple as it sounds… a cake with bananas in it! This cake is perfectly sweet and dense, but a little fluffier than your typical banana bread. The cream cheese frosting compliments the sweet and warm banana flavor perfectly. I highly recommend having banana cake for breakfast after making this!

Here’s what you’ll need to make banana cake:

There’s nothing I crave more on a hot summer day than a refreshing scoop of sorbet. It’s lighter and more refreshing than ice cream, so I never feel too full after eating it, and it’s so fast and easy to whip up! Made with simple and budget-friendly ingredients– frozen fruit, maple syrup, and lemon juice– this sorbet recipe is endlessly customizable and ridiculously delicious.

As someone who has a major interest in vegan and gluten-free options, let me tell you, this sorbet checks all the boxes and does not disappoint! It’s naturally gluten-free, vegan, and brings the summertime vibes year round. It will keep in your freezer in an air-tight container for up to one month without losing any quality. (But, trust me, all restraint goes out the window once you try this sorbet. I don’t see any leftovers in your future!)

What is Sorbet?

Sorbet is a frozen dessert made from blended fruit, juice or water, and sugar (though in this case, I’m using maple syrup to achieve a “chewier” and less icy texture.) It is typically fat-free (but if you choose to make an avocado sorbet, please invite me over), and it’s considered a great palate cleanser in multi-course meals. This sorbet recipe is smooth and has a great mouthfeel, a bit creamier and less icy due to the frozen banana addition!

Sherbet Vs. Sorbet

The main difference between sherbet and sorbet is that sherbet contains dairy, whereas sorbet does not. Sherbet has a creamier and slightly less icy texture, but the fruit flavors may be less pronounced. A great bonus is that sorbet is vegan!

Ingredients for Sorbet

Here’s what you’ll need to make sorbet:

  • Frozen Mango: I used frozen mango chunks which come in a pretty big package, so plan to use the rest to make meal prep smoothie packs!
  • Real Maple Syrup: Traditional sorbet has sugar and ice added, but this sorbet is special because the maple syrup (agave syrup also works—and it’s cheaper!) gives it a creamier, smoother texture. The lack of added ice/water makes it easy to re-freeze and enjoy another day without the risk of it turning icy and losing its smooth mouthfeel.
  • Lemon Juice: Adds tartness to enhance the natural flavor of the fruit and counteract the sweetness.
  • Frozen Ripe Bananas: Help achieve a creamy texture without adding any dairy! Make sure to use very ripe bananas for the creamiest texture. Grab a big bunch on sale, cut them up, and freeze for meal prep.

Flavor Variations

The great thing about this sorbet recipe is how adaptable it is. Swap out the mango for any of these frozen fruits:

  • Strawberries
  • Blueberries
  • Açai berry

Tips for Making Sorbet

  • To achieve the swirl look, just make batches of different flavors separately and then pour each flavor into a larger freezer-safe dish.
  • Make sure you cover your sorbet when you pop it in the freezer to set! Fruit gets a gummy unpleasant texture if it becomes freezer-burnt.

My Red White and Blue Salad is Summer in a bowl. Christmas and Thanksgiving are great holidays, but I’m a summer gal through and through. There’s just something magical about the smell of sunscreen and fresh cut grass mingling with drool-worthy scents wafting from the grill. Are you with me? Now, all you need is an ice cold beverage, some sunshine, and this Red White and Blue Fruit Salad! You’re going to want to save this recipe, because it’s perfect for Memorial Day and the Fourth of July.

The only thing I love more than celebrating ‘Merica and honoring our veterans is berries being in season! I pretty much refuse to buy berries when they aren’t in season because the quality is never as good and they are never quite as budget-friendly. I’m also a sucker for nostalgia and I feel like there was always a whipped cream fruit salad variation at all of my family gatherings growing up, probably because fruit salads require almost zero prep and they are always a crowd pleaser! This one is extra special because it brings the patriotic vibes, too.

What is Red, White, and Blue Fruit Salad?

This patriotic fruit salad utilizes red, white, and blue fruits to create a colorful display fit for Independence Day or Memorial Day (or anytime I’m craving a refreshing and fun fruit salad). Strawberries represent the red, bananas and apples represent the white, and blueberries represent the blue. I added a little bit of crunch with some walnuts for texture. Topped off with some classic Cool Whip, this is one refreshing salad that’s a great BBQ side dish or dessert.

Ingredients

Here’s what you’ll need to make this red white and blue fruit salad:

  • Fruit: I used a combination of bananas, strawberries, apples, and blueberries to create this patriotic salad.
  • Sugar: A little bit of granulated sugar makes the berries glisten and helps prevents the apples from browning.
  • Walnuts: Crushed walnut pieces add a bit of savory nuttiness and crunch.
  • Marshmallows: Add pops of sweetness. Mini marshmallows are the perfect size, but you can also quarter full-sized marshmallows.

What Else Can I Add?

Carrot cake is one of those recipes where some people love it and others strongly dislike it. Well today, these Carrot Cake Muffins deserve to be in a class of their own. They’re soft, fluffy, and perfectly moist with all the wonderful flavors of carrot cake, but in a convenient, easy to share muffin size. And spoiler alert, I’m a carrot cake lover, so I’ll be enjoying these muffins all season long! Have fun adding your favorite carrot cake mix-ins like sweet raisins and walnuts, or you can keep things simple and save a little bit on your budget. Either way you’re guaranteed to love these delicious carrot cake muffins.

Ingredients For Carrot Cake Muffins

I used my zucchini muffins recipe, that I absolutely love, as inspiration for these muffins. I adjusted the measurements and added a few extra spices to fit the flavor profile of carrot cake. The results were absolutely ahhmazing! Here’s everything you need:

  • Carrots: Carrots are of course the star of the show, so you’ll need about 3-4 large whole carrots, finely grated for this recipe. 
  • All-Purpose Flour:  All-purpose flour gives the muffins structure. You can safely substitute up to half of the flour for whole wheat flour without affecting the flavor or texture too much.
  • Baking Powder & Baking Soda: These are both leavening agents to help the muffins rise. I use both due to the extra acidity from the applesauce.
  • Eggs: Eggs to help bind all of the muffin ingredients together.
  • White Granulated Sugar & Dark Brown Sugar: The combination of both sugars help balance the sweetness, moisture and texture of the muffins.
  • Applesauce & Oil: The combination of both cooking oil and applesauce keeps the muffins moist, but not too oily, and you gain more flavor and moisture by incorporating the applesauce.
  • Cinnamon, Nutmeg & Ginger: These are classic spices that are often found in carrot cake. We use the right amount of each one to give these carrot cake muffins a wonderful flavor!  
  • Vanilla: A touch of vanilla extract adds more rich flavor to the carrot muffins.
  • Golden Raisins: The added raisins were honestly my favorite part of the muffins. They added a subtle sweetness and more texture to the muffins. Feel free to use regular raisins instead of golden raisins if that’s what you have on hand.
  • Turbinado Sugar (optional): Adding a sprinkle of turbinado sugar on top of each muffin is totally optional, but such a special treat. It gives each muffin a sweet and light crunch on the top. If you don’t have turbinado sugar, no worries, these muffins are still delicious without it.

How To Grate Your Carrots

As I mentioned above, you definitely want to grate fresh whole carrots for this recipe. Although its tempting to buy pre-shredded matchstick carrots at the grocery store, they simply are not moist enough for these muffins. They also aren’t grated fine enough and won’t mix well with the batter. Grating fresh carrots yourself is the way to go!

Also, most box graters come with a coarse, medium, and fine grating side. I tested these muffins using both medium and finely grated carrots. The finely grated carrots were the winner! They blended better in the batter and provided a bit more moisture compared to the medium-size grated carrots.

Recipe Tips & Add-Ins

  1. Don’t over mix the batter! Over-mixing will cause the muffins to become dense instead of light and fluffy. Mix the dry and wet ingredients together until they are just barely combined and there are no traces of dry flour left in the bowl.
  2. Oil your muffin pan really well. Even if you are using a nonstick muffin pan, make sure to oil it well or use cupcake liners to prevent your muffins from sticking to the pan.
  3. You can easily stretch this batter and get 12 regular size muffins. I wanted larger, bakery style muffins, so I divided the batter into ten muffin wells.
  4. If you want even more of a carrot cake taste, try adding some chopped walnuts, pecans, or shredded coconut to the batter. And if you really want to take these carrot muffins over the top, add some cream cheese frosting on top! ;)

How To STore Carrot Cake Muffins

Allow the muffins to cool completely at room temperature before storing. You can store leftover carrot cake muffins in an airtight container or a food storage bag in the fridge for 4-5 days. For longer storage, store in a freezer-safe storage bag for up to 3 months. Thaw frozen muffins at room temperature or microwave for about 30 seconds until warm.

  • Preheat the oven to 350°F. Wash, peel and grate the carrots using the small/fine holes on a box grater. Set the grated carrots to the side.
  • In a large bowl, whisk together the wet ingredients (eggs, dark brown sugar, granulated sugar, applesauce, oil and vanilla extract) until well combined.

  • Bake the muffins for 20-22 minutes or until golden brown and puffed in the center. Allow the muffins to cool for about 5 minutes, then carefully loosen the edges with a knife and transfer the muffins to a wire rack to finish cooling. Enjoy!
